pizza cake

by Barry Lewis

Ingredients

Ready made pizza dough (6 pizzas worth)
Jar pizza sauce
Bag of Mozzarella cheese, grated
1 green pepper, thinly sliced

So this was a pretty odd thing to make, and, if i’m being honest I did not really want to make it but in the last week I have been absolutely bombarded with requests to make either a pizza cake, or a skillet cookie. So I decided to put it to a poll here on the website, and the pizza cake was a clear winner.

Anyhow so I set out to try and work out how to make this thing and found a good guide over at: pillsbury.com/recipes/pepperoni-pizza-cake I pretty much used this as a guide except added peppers and it came out perfectly.

Use ready made pizza dough and cut into circles the same size as the base of your loose bottom cake tin – try to use a deep one. Bake each of the circles until just firmed, you don’t really want them too crunchy or it’ll be a rock cake.

Line the cake tin with baking parchment, then a band of pizza dough and then sit your first baked pizza base inside – you need to have about 5 bases in total, of course this would vary with the depth of your tin, mine was 20cm.
Top the pizza as you would normally, then add another base layer on top and build again, repeat until you hit the top.

Once it’s filled to the brim, form a mini crust around the tin and then bake in the oven for around 25 minutes. 350F or equivalent, if it starts to burn on the top, cover in tin foil (mine didn’t). Once ready let stand for 5 minutes, remove from the cake tin and cut into wedges to reveal those awesome stacked pizza layers with warm gooey mozzarella cheese, tomato sauce, pepperoni and peppers – that my friends was a super delicious pizza cake.

Come to think of it this pizza cake, looks more like a pizza pie, but whatever you call it (i’m sticking with pizza cake) this will be a real hit. Try it at a party cut into thin slices to give people a huge surprise!!
