Pepperoni Pizza Quesadilla

Ingredients

Tortilla Wraps

Pizza base sauce

Grated mozzarella

pepperoni slices

1 green pepper, sliced into sticks

In this video recipe my Daughter Chloe helps make some pepperoni pizza quesadilla. Super simple, extremely tasty and ready in a flash – you’ll love them. The great thing with this recipe is it’s simplicity and that a lot of the steps if cooking with a youngster are safe for them to be involved.

Start of by laying down a tortilla and spreading a thin layer of pizza sauce all over ensuring even coverage. Sprinkle on some grated mozzarella and then top with peppers and the pepperoni (it’s best to cook the pepperoni for a minute or 2 in a frying pan beforehand). Top with more cheese and then add another tortilla with tomato sauce on over the top with the non sauced side facing up.

Pre-heat a griddle pan or frying pan over a medium flame and then carefully lift the tortilla into the pan to cook until browned / lightly charred. You can either flip the quesadilla in the pan or what I do is check the bottom and when happy lift out with two spatulas onto a plate, put another plate on top, then flip over, then simply lift back in the pan and cook the other side for again for a couple of minutes until charred.

The cheese acts as a glue and holds it together really, so other cheese like cheddar would work a charm. Give these pepperoni pizza quesadilla a go, they’ll be a real winner!
