Homemade Cornflakes project!

Ingredients

Fried tortilla version

Corn tortillas

Vegetable oil to cover a pan

Pinch of salt

Batter version

Tbsp sugar

180g Cornmeal plus extra for crunchy topping.

1tsp vanilla extract

200ml cold water

Pinch salt

Dough Version

180g Plain flour

80g Cornmeal

1/2tbsp vegetable oil

Pinch salt

80ml Water

1.5tbsp honey

So here’s how to make homemade cornflakes 3 different ways with my homemade cornflake project, personally taste wise from a naughty point of view and simplicity the corn tortilla frying was best, but for similarity, the batter version! Good luck if you try it!

For the tortilla version, warm a frying pan large enough to fit a tortilla in it. Steadily add enough oil in it to cover the bottom so the tortilla can be submerged, heat slowly and put the tortilla in the pan. Keep your eye on it and fry until lightly golden and resting on kitchen towel, sprinkle with a little salt and allow to cool before breaking/smashing into cornflake sized pieces.

For the batter version In a mixing bowl combine the cornmeal, sugar, extract, water and salt and stir together, you will need to add more water than the 200ml but add that in at first and slowly add more as you mix until a smooth pancake texture batter is achieved.

Line a baking tray and pour the batter onto it, you want to get an extremely thin layer of batter on the tray, almost transparent! The thicker it is, the thicker your cornflakes so really get this right!

For a crunchy topping mix together some more cornmeal in a bowl and slowly add water so it bonds but still forms crumbs, it will be quite dry. Sprinkle this mixture evenly over the cornflake batter.

Bake on the middle shelf for 10 minutes on 180c / 160c fan, then allow to rest / cool and tear into cornflake shapes, lower the heat of the oven to 120c / 100c fan… bake until lightly golden for 20 minutes or so or until happy.

For the dough version add the plain flour, cornmeal, oil and salt to a bowl and mix together with a wooden spoon until well combined. Mix the water with the honey in a separate glass and then add to the bowl and stir through, work it well until you get a dough, knead with your hands. Roll the dough out as thin as you can (this is critical or you will have thick cornflakes) I rolled mine between some baking parchment that was lightly floured.

Bake in the oven at 150c / 130cfan until lightly browned – as you’ll see mine turned out like a tortilla itself! But it was fun to try it and maybe you’ll get better luck…. Break up and serve in a bowl.
