Healthy KFC Zinger Burger

Ingredients

10 mini chicken breast fillets

60g chilli flavour tortilla chips

1tsp hot chilli powder

1tsp garlic powder

1tsp paprika

1tsp onion powder

2 eggs, beaten

180g plain flour, seasoned with pepper

Mayonnaise to serve

Lettuce to serve

Cheese slice (optional)

Bread buns, extra lettuce or portabello mushrooms to serve

 

Zinger Sauce (optional)

3tbsp ketchup

1.5tbsp mayonnaise

1tsp vinegar

1tsp sweet chilli sauce

1tsp garlic powder

Pinch of salt

Pinch crushed red chilli

This is a great healthier alternative to a fried chicken kfc zinger burger – we are baking the chicken rather than frying it but it has superb flavour kick…. There’s also the option to serve it naked in a lettuce bun, mushroom bun or standard burger bun!

First up get a zip lock bag and add in the chilli powder, garlic powder, paprika and onion powder. Then pour in the chilli flavoured tortillas, do up the zip on the bag and bash with a rolling pin until smooth and in small pieces – it helps to roll the rolling pin over it too to make it super fine. If you don’t have a ziplock bag use cling film wrapped up. Once bashed together give it a good mix to achieve a consistent colour.

Pre-heat the oven to gas mark 5 / 180c / 160fan.

Put the beaten egg in one bowl, the seasoned flour in another, and the bashed tortilla bits in one final bowl. With one hand grab a piece of chicken and coat it in the flour, lift it out and dunk in the beaten egg bowl, shake off any excess, rest it in the bowl of chilli crumbs and lift extra bits on top with your clean hand. Place on a lined baking tray and repeat with all of your chicken.

Once they are all coated, bake for 40 minutes in the oven, flipping them over halfway through.

Meanwhile you can make the zinger sauce if you wish to…. simply mix the ingredients together in a ramekin. Tweak to taste using more quantities as needed.

If you wish to do the mushroom bun option, wash 2 portabello mushrooms (for each burger you want), brush with oil all over and season with pepper and place in the oven on a baking tray for the last 20 minutes of the chicken baking. If you are making the standard bun option, slice in half and toast in a frying pan for a few minutes cut side down with no oil over a medium heat.

To assemble, place the bun base down, spread on some mayo / zinger sauce, pile with lettuce leaves and add 2 pieces of the zinger chicken bits on top, add a cheese slice if you wish or more sauce, then stick the lid on top!

Super delicious on their own too dunked in mayonnaise! Enjoy this healthier spin on a KFC zinger burger, the kitchen smelt so good afterwards!
